Šparoge su jedna od prvih proljetnih poslastica koje možemo kupiti. I nekako ne možemo zamisliti proljeće bez ovog nevjerojatno ukusnog omleta sa šparogama.
SASTOJCI:
1 žlica pinjola
400 g zelenih šparoga
2 mlada luka
150 g Zottarelle
5 jaja
sol, papar
2 žlice ulja
PRIPREMA:
Pinjole nasjeckajte, prepržite u tavi bez dodatka ulja tako da postanu zlatno-smeđi i ostavite ih sa strane. Šparoge operite, donju trećinu ogulite, a vrhove odrežite. Narežite šparoge na komadiće. Mladi luk očistite, operite i narežite na kolutove. Ocijedite Zottarellu. Umutite jaja i začinite solju i paprom.
Zagrijte ulje u tavi. Prepecite šparoge oko 5 minuta dok ne postanu al dente. Dodajte mladi luk i sve zajedno kratko još pecite. Dodajte umućena jaja, pospite pinjolima i Zottarellom i ostavite da odstoji pokriveno na niskoj temperaturi oko 10 minuta.
